Corndog With Honey Mustard Chocolate: Paul’s At It Again!

If I whispered the words "Corndog With Honey Mustard chocolate" to you, I bet you'd know in an instant who created such a thing.

That's right, chocolate wizard Paul A. Young has revealed his chocolate table for Valentine's Day 2020.

This year's collection pays homage to 120 years of love on the big screen, drawing inspiration from romantic films.

Some of the creations, such as the Coffee and Croissant chocolate, sound divine, while others, like the Corndog With Honey Mustard chocolate or the Pizza And Popcorn Truffle push the boundaries.

Paul A. Young Valentine's Day 2020 Collection

Here's this year's line-up:

Sour Cream Hotcakes and Maple Syrup

Inspired by romantic films from the 1910s - Charlie Chaplin; a sweet and silent peck on the cheek.

Based on Charlie Chaplin's favourite breakfast, this one features a Billington’s dark maple caramel layered with sour cream ganache which is then hand-rolled in a mix of Guittard 38% Soleil d'Or milk chocolate and crispy feuilletine flakes.

Cherry, Rose, and Vanilla

Inspired by romantic films from the 1920s - The Kiss; Greta Garbo; sultry glances and clandestine kisses.

The filling consists of Guittard 35% Soie Blanche white chocolate ganache with morello cherry purée, amaretto liqueur, vanilla, and rose. It is then hand-rolled in Guittard 65% Peru single-origin dark chocolate and decorated with a coloured sugar heart.

Peach And Bourbon Cobbler

Inspired by romantic films from the 1930s - Gone With The Wind; Scarlett and Rhett; a tempestuous affair, flaring passions.

A peach reduction sits on a Guittard 38% Soleil d’Or milk chocolate ganache flavoured with bourbon and cinnamon. It is then rolled in more Soleil d'Or and topped with cinnamon cobbler crumbs.

Tea And Malted Milk Biscuit

Inspired by romantic films from the 1940s - Brief Encounter; Laura and Alec; fleeting glances; the promise of an escape from the everyday.

A Guittard 38% Soleil d'Or base is spiked with English Breakfast and Assam teas, before being rolled in yet more Soleil d'Or plus malted milk biscuit crumbs.

Fiery Raspberry Bellini (vegan)

Inspired by romantic films from the 1950s - Some Like It Hot; Marilyn Monroe; flirtatious glamour and champagne on tap!

A raspberry reduction sits alongside a Champagne and Guittard 62% Eureka Works dark chocolate ganache. It's rolled in Eureka Works dark chocolate spiced with cayenne pepper.

Coffee and Croissant

Inspired by romantic films from the 1960s - Breakfast at Tiffany's; Audrey Hepburn; schemes and plotting overcome by true love.

A white chocolate shell is filled with a Guittard 38% Soleil d’Or milk chocolate ganache flavoured with coffee and croissant.

Corndog With Honey Mustard

Inspired by romantic films from the 1970s - Grease; Sandy and Danny; Summer loving and all the fun of the fair.

This chocolate draws on the flavours of a classic American snack food - the corn-dog. A honey mustard and Guittard 38% Soleil d’Or milk chocolate ganache is layered on top of a hot dog-flavoured Firetree 75% Papua New Guinea single-origin dark chocolate ganache. Another layer of Guittard 35% Soie Blanche white chocolate and cornbread ganache completes this bite.

Apple Pie And Strawberry Ice Cream

Inspired by romantic films from the 1980s -When Harry Met Sally; Harry and Sally; New York diners; romance blossoming from friendship.

A spiced apple reduction sits on a strawberry ganache inside a Valrhona 33% Madagascar single-origin milk chocolate shell.

Red Velvet Cake

Inspired by romantic films from the 1990s- Pretty Woman; Vivian and Edward; luxurious on the outside, but sweet and fun at the core.

A cream cheese and Guittard 35% Soie Blanche white chocolate ganache rests on a red velvet cake ganache inside a Valrhona 40% milk chocolate shell with velvet-textured red cocoa butter decoration.

Xocoatl

Inspired by romantic films from the 2000s - Chocolat; Vianne and Roux; the North Wind bringing together adventurous souls.

Drawing on the spices used in Xocoatl (the original Mayan hot chocolate), this solid chocolate cocoa pod is made from Guittard 91% Nocturne with honey, cinnamon, cayenne pepper, and nutmeg.

Torta Della Nonna

Inspired by romantic films from the 2010s - Call Me By Your Name; Elio and Oliver; first love found in the Italian sunshine.

A toasted pine nut is wrapped in a Guittard 35% Soie Blanche white chocolate ganache flavoured with ricotta, limoncello, and vanilla beans, all wrapped in a Valrhona 66% Caraibe dark chocolate heart-shaped shell.

Pizza And Popcorn Truffle

Inspired by Valentines’ Day 2020; cosy nights in with films and treats or a Saturday night date at the movies.

A Guittard 35% Soie Blanche white chocolate and parmesan cheese ganache is layered with tomato, oregano, and olive oil ganache. It is then rolled in a blend of Guittard 38% Soleil d’Or milk chocolate and Firetree 75% Papua New Guinea dark chocolate mixed with Cornish sea salt and popcorn pieces.


Another new flavour is the Peru and Vanuatu Ganache, made with a Firetree 76% Vanuatu single-origin dark chocolate ganache inside a Guittard 65% Peru single-origin dark chocolate shell. Paul's Orange Cream Truffle is made with a Guittard 65% Madagascan Criollo single-origin dark chocolate caramel ganache with orange oil.
