Honeycomb – or Cinder Toffee or Hokey Pokey as it is sometimes known – is in essence, aerated sugar. Caramelised sugar or honey is mixed with bicarbonate of soda to create pockets of air trapped inside the hardened, crunchy sugarwork. The result is a pattern that looks like honeycomb, and tastes dreamy when enrobed in chocolate. It’s also a great ingredient inside chocolate bars.
