Born in Barnsley, South Yorkshire, Paul A. Young studied Hotel Catering & Management at New College, Durham and Leeds Metropolitan University. He worked up through the ranks in professional kitchens to become Head Pastry Chef under Marco Pierre White at Quo Vadis and Criterion. Here, he developed his passion for all things chocolate.

He now runs two chocolate shops in London, has written several chocolate recipe books, and makes many celebrity guest appearances on television shows. He’s also hosted cookery lessons on P&O cruise ships.

Paul is renowned for his progressive experimentation with chocolate pairings, combining unusual flavours with varying origins of chocolate to create unbelievable flavour sensations. His Marmite truffle is a testament to that. He also refines recipes to create the purist of flavours, as demonstrated in his two-ingredient champagne truffle.

In July 2023, his business, Paul A Young Fine Chocolates, shut its doors for the final time.

Swiss Chocolates From Betty's°

Fritz Bützer, who changed his name to Frederick Belmont when he settled in Harrogate, learned to become a confectioner and chocolatier while travelling through Switzerland and France. In 1919, he opened Betty's Tea Room in the Yorkshire town which has since become an institution. The company still makes and sells a wide range of chocolates using the finest Swiss Grand Cru.
